Roasted Garlic Potatoes
4 potatoes (Idaho)
3 tablespoons Boyajian Garlic Oil
1/4 cup grated parmesan cheese
2 tablespoons fresh parsley, chopped
salt & pepper to taste
Preheat oven to 400 degrees. Wash and dry potatoes. Cut into 1-inch thick rounds. Toss potatoes in bowl with Garlic Oil, salt and pepper. Place in shallow baking dish and roast for about 15 minutes. Turn potatoes over and bake another 15 minutes or until cooked through. Sprinkle with parmesan cheese and return to oven for 5 minutes. Remove from oven and sprinkle with chopped parsley. Serve immediately.
