Makes 24 cookies
Ingredients:
- 1 ½ cups + 3 Tablespoons all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup canola oil
- ¾ cup granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
- 1 ¼ teaspoon Boyajian citrus oil of choice
- Colored sanding sugar (optional, for decoration)
To prepare:
- Preheat oven to 350 degrees Fahrenheit
- In a mixing bowl, whisk together the flour, baking soda, baking powder, and salt
- In another mixing bowl, mix together the canola oil and sugar. Once fully combined, mix in the egg, vanilla extract, and preferred citrus oil.
- Once fully mixed, begin slowly adding the dry mixture to the wet mixture until fully combined. The texture should be a slightly wet dough, able to be separated and rolled into balls.
- Separate dough in half creating 2 equal parts. Continue separating in half until you end up with 24 equal size balls.
- Line 2 baking sheets with parchment paper, and arrange the cookie dough balls leaving enough room in between as they will spread while baking.
- Press down, and flatten each ball so that they are about ¼’’ thick
- Sprinkle sanding sugar on the top of the cookies (optional)
- Bake for 8-12 minutes, then remove from oven.
- Allow to cool for 10 minutes on baking sheet, then transfer to cooling rack.
- Serve and enjoy.
Store in refrigerator for up to 2 weeks.
