Citrus Sugar Cookies

Ingredients
  

  • 200 grams all-purpose flour (200g of flour = 1.5 cups + 3 Tablespoons)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup canola oil
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • teaspoons Boyajian citrus oil (use lemon, lime or orange)
  • colored sanding sugar optional

Method
 

  1. Preheat the oven to 350℉.
  2. In a mixing bowl, whisk together the flour, baking soda, baking powder, and salt
    200 grams all-purpose flour, ½ teaspoon baking soda, ½ teaspoon baking powder, ¼ teaspoon salt
  3. In another mixing bowl, mix together the canola oil and sugar. Once fully combined, mix in the egg, vanilla extract, and preferred citrus oil.
    ½ cup canola oil, ¾ cup granulated sugar, 1 large egg, ½ teaspoon vanilla extract, 1¼ teaspoons Boyajian citrus oil
  4. Once fully mixed, begin slowly adding the dry mixture to the wet mixture until fully combined. The texture should be a slightly wet dough, able to be separated and rolled into balls.
  5. Separate dough in half creating 2 equal parts. Continue separating in half until you end up with 24 equal size balls.
  6. Line 2 baking sheets with parchment paper, and arrange the cookie dough balls leaving enough room in between as they will spread while baking.
  7. Press down, and flatten each ball so that they are about ¼’’ thick
  8. Sprinkle sanding sugar on the top of the cookies (optional)

  9. Bake for 8-12 minutes, then remove from oven.
  10. Allow to cool for 10 minutes on baking sheet, then transfer to cooling rack.
  11. Serve and enjoy.
