Orange-Banana Bread

  • 1 8"x4" loaf pan
  • 1 Potato masher

Method
 

  1. Preheat oven to 350℉.
  2. Using a potato masher, mash the bananas together in a medium mixing bowl until smooth. Some small lumps are ok.

  3. Pour the melted butter into the banana mash and mix until fully combined.
    ⅓ cup melted unsalted butter
  4. Stir in the baking soda and salt, then add granulated sugar and mix completely.
    1 teaspoon baking soda, 1 pinch of salt, ¾ cup granular sugar
  5. Add the egg, vanilla extract and pure orange oil then mix again until fully combined.
    1 large egg, 1 teaspoon Boyajian vanilla extract, ½ teaspoon Boyajian pure orange oil
  6. Slowly add the flour in three stages, mixing thoroughly after each, until the batter is smooth with small lumps
    1½ cups all-purpose flour
  7. Pour the batter into a greased bread pan and bake for 52-58 minutes. Insert a toothpick into the center of the loaf to check for doneness. Once the toothpick comes out clean, remove the loaf from the oven.
  8. Let the loaf cool in the pan for 10 minutes before transferring to a cooling rack. Serve and enjoy!

Notes

Tip: For a slightly sweeter loaf, try using over-ripe bananas
