3-4- Servings

– 1 ½ pounds small red potatoes
– 1/4 cup Boyajian Rosemary Oil **
– 1 teaspoon kosher salt
– ½ teaspoon freshly cracked black pepper
– 2 tablespoons dried or fresh thyme (optional)


1. Pre-heat oven to 400 degrees F
2. Cut cleaned and dried potatoes in halves or quarters and place in large bowl
3. Add oil, salt, pepper, thyme and toss until evenly coated
4. Place on large baking sheet and spread to form one layer,
5. Roast for one hour, until browned and crisp, (flipping twice to ensure even roasting)
6. Remove from oven, season to taste as desired and serve

* Can also be made with Boyajian Garlic or Roasted Chili Oil in place of Rosemary Oil
