Rosemary Roasted Potatoes

Ingredients
  

  • pounds small red potatoes
  • ¼ cup Boyajian rosemary oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 Tablespoons dried or fresh thyme

Method
 

  1. Pre-heat oven to 400 degrees F
  2. Cut cleaned and dried potatoes in halves or quarters and place in large bowl
    1½ pounds small red potatoes
  3. Add oil, salt, pepper, thyme and toss until evenly coated
    ¼ cup Boyajian rosemary oil, 1 teaspoon kosher salt, ½ teaspoon freshly cracked black pepper, 2 Tablespoons dried or fresh thyme
  4. Place on large baking sheet and spread to form one layer
  5. Roast for one hour, until browned and crisp, (flipping twice to ensure even roasting)
  6. Remove from oven, season to taste as desired and serve

Notes

This recipe can also be made by replacing the rosemary oil with Boyajian garlic or roasted chili oil. Try it now!
